This two hour class is perfect for anyone who wants to learn the basics of whetstone knife sharpening and knife skills. We will cover different knife types, steels, laminations, and geometry, with a focus on sharpening a knife while removing the least amount of material. Participants will learn how to sharpen their knives using a 1000/6000 grit dual whetstone and will be provided with guidance on proper technique.

From there, we will move on to knife skills, starting with knife safety and different types of grips. Participants will also learn various ways to cut produce, including dicing, mincing, and julienning. Our experienced instructor will provide hands-on guidance to ensure each participant is comfortable and confident using their knives.

At the end of the class, each participant will leave with a 1000/6000 grit dual whetstone to continue practicing their skills at home. Participants will also have the opportunity to use their newly acquired skills to prepare some snacks during the class.

Participants are required to bring their own knives to sharpen, but we recommend bringing no more than three knives. Flexible knives can be more challenging to sharpen for beginners, so keep that in mind when selecting which knives to bring. Additionally, each participant must bring their own cutting board. We strongly advise against bamboo cutting boards as they wear down your knife’s edge the fastest.
